go line dancing or take a dance class together!
check out a local rodeo and grab Texas Road House for dinner

go hiking and pack a charcuterie board
try out a fun workout class (like cycling or goat yoga)
go rock climbing or take a rock climbing class
cook a new recipe together and have a fancy date night in

Go to a board game cafe (they are real I promise) and play some games, or have a game night in
go roller skating and get ice cream after
take a walk around a park and maybe try your luck at pedal boating
Go to a bookshop and read each other your favorite children’s book from when you were a kiddo
Take a queso tour — go to a few mexican restaurants in town and only order queso to evaluate who has the best (you could also do guac or salsa if you don’t like queso— I personally cannot relate but no judgement here)

go to an amusement park! This would literally be such a dream date. Kind of expensive though, so maybe do this for an anniversary.

Try your luck at an escape room! These can also be pricey so maybe consider doing this as a double date with some friends.
Take a bike ride on a (preferably paved) nature trail or around a scenic part of town. You could also stop and catch a meal at a little cafe.
